There’s nothing quite like the taste of ripe summer peaches — and with freeze-drying, you can preserve that sunshine sweetness for decades. This method removes moisture while keeping color, nutrients, and natural flavor intact.
These Freeze-Dried Peach Cobbler Bites capture the best of both worlds: sweet fruit and a hint of buttery crunch, all shelf-stable for the off-grid pantry.
🌸 Recipe: Freeze-Dried Peach Cobbler Bites
Ingredients:
- 4 ripe peaches (peeled and diced)
- 1 tbsp honey or brown sugar
- ¼ tsp cinnamon
- ½ tsp vanilla extract
- ½ cup granola or crumbled shortbread (optional for cobbler-style topping)
Equipment:
- Freeze dryer (Harvest Right or similar)
- Parchment-lined trays
- Mixing bowl
- Airtight jars or Mylar bags
Instructions:
- Prepare the Peaches:
Wash, peel, and dice peaches into small, even pieces. - Flavor the Mixture:
In a bowl, combine peaches with honey, cinnamon, and vanilla. Stir gently to coat. - Assemble on Trays:
Spoon small clusters onto parchment-lined trays.
Sprinkle lightly with granola or shortbread crumbs for that “cobbler bite” texture. - Pre-Freeze:
Freeze overnight until completely solid to shorten drying time. - Freeze-Dry:
Transfer trays to your freeze dryer.
Typical drying time: 24–30 hours, depending on moisture content.

Once cooled, seal in airtight jars or Mylar bags with oxygen absorbers.
Store in a cool, dark, dry place.
